Hot and Sour Soup




This is a recipe that my good friend Rebecca shared with me. I was craving hot and sour soup when I was pregnant- so it's good that I was able to learn to cook big batches of this!

I like that this recipe is pretty flexible- you can add more or less ingredients. I usually don't put in the mushrooms or carrots, but I do like adding in bamboo shoots. You can add more or less soy sauce and vinegar depending on your taste.

Ingredients:
1/4 lb pork loin/ chicken
3 tablespoons corn starch (mixed with water)
2 eggs, beaten
1 teaspoon sesame oil
2 scallions, chopped

~ingredients A
1 tspn soy sauce
1 tspn sesame oil
1 tspn cornstarch

~ingredients B
5 cups water
1 cup chicken broth
2 tablespoons carrots, shredded (never usually add this)
1 block tofu cubed
3 black mushrooms

~ingredients C
3 Tablespoons soy sauce
3 Tablespoons red vinegar
1 teaspoon black pepper
2 tspn garlic chili sauce

Directions:
  1. Shred pork. Add Ingredients A. Mix well.
  2. Bring Ingredients B to boil. Season with C.
  3. Add eggs and thicken with corn starch with some hot water
  4. Add scallions
  5. Add sesame oil. and add soy sauce and vinegar to taste.
