Thai Grilled Chicken Thighs



My husband's cousin's wife Lilly shared this great recipe with us. I have such a hard time getting my kids to eat chicken, but they will eat chicken when I cook it this way. I just throw together all the marinade ingredients together in a Ziploc bag and marinate the chicken a couple of hours. My husband will grill it and then dinner is done!

Made it tonight and marinated it for just 2 hours. The flavors might be better if you can marinate it overnight. Also used skinless drumsticks in place of chicken thighs and seemed to work well!

Thai Grilled Chicken Thighs (~adapted from food.com)

Ingredients
Serves 4
                                         

12 boneless skinless chicken thigh,
13 cup fresh basil, chopped
13 cup fresh coriander, (cilantro) chopped
1 tbsp ginger, minced
1 tbsp garlic, minced
1 tbsp chile pepper, minced
1 12 tbsp soy sauce,
1 12 tbsp asian fish sauce,
1 12 tbsp olive oil,
1 12 tbsp brown sugar,

Directions:

  • Prep 10 min
  • Cook 15 min
  • Ready 25 min

    1. Combine all ingredients except chicken in a bowl.
    2. Mix thoroughly.
    3. Add chicken and leave to marinate at least one hour, preferably longer.
    4. Grill chicken on the BBQ, hotplate or in the griller until golden brown and cooked through.
