My husband's cousin's wife Lilly shared this great recipe with us. I have such a hard time getting my kids to eat chicken, but they will eat chicken when I cook it this way. I just throw together all the marinade ingredients together in a Ziploc bag and marinate the chicken a couple of hours. My husband will grill it and then dinner is done!
Made it tonight and marinated it for just 2 hours. The flavors might be better if you can marinate it overnight. Also used skinless drumsticks in place of chicken thighs and seemed to work well!

Ingredients

12 boneless skinless chicken thigh |
1⁄3 cup fresh basil, chopped |
1⁄3 cup fresh coriander, (cilantro) chopped |
1 tbsp ginger, minced |
1 tbsp garlic, minced |
1 tbsp chile pepper, minced |
1 1⁄2 tbsp soy sauce |
1 1⁄2 tbsp asian fish sauce |
1 1⁄2 tbsp olive oil |
