Vegan chocolate cupcakes



Made these for the 5th birthday of my youngest!  

Used this recipe for a "Nailed It" competition at home



 Made these for my oldest daughter's 9th birthday (sushi theme!). Just baked the cupcakes in these black paper cupcake wrappers ( a little smaller than usual cupcake liners), frosted with white frosting, and topped with white jimmies. Then added candy on top to decorate. For the cupcakes with Swedish fish, also used some black edible paper strips to put it on top to make it look like sushi. 

Made this Easter pull-apart cupcake-cake for an Easter party. I laid out the cupcakes, then put a dot of frosting below the cupcakes so they would hold in place. Then I frosted, making sure to frost in between the cupcakes too. Fun project with the girls.

I decorated these with blue frosting for the water, and ground graham crackers for the sand. I then put a teddy graham cracker into a life saver and stuck it into the blue frosting.

Pokémon cupcakes!

My 2nd daughter is allergic to eggs and dairy, so I am constantly on the look out for good vegan recipes. This is a very good chocolate cupcake recipe.

If you have any leftovers, you can just store them in the freezer! I find that if you make it at least 1 day ahead, they seem to be moister.  I usually substitute the white vinegar with apple cider vinegar and still turns out fine.

My 2nd daughter LOVES ducks! So made these for her 4th birthday with duck decorations. Just frosted with white frosting, and coated with blue sugar crystals. Then bought mini rubber ducks and put them on the top. Her party guests could then take home the ducks as favors!

For cupcakes- bake for 25 min.

Vegan Chocolate Cake (~from allrecipes.com)

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar
  • 1 cup water

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.
  2. Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.
  3. Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool. (Bake 20-25 min for cupcakes)
