Vegan Strawberry Ice Cream




I really like this strawberry ice cream recipe made with fresh strawberries, adapted from the Cuisinart recipe booklet:

Ingredients:
  • 2 cups strawberries, hulled (basically 1 pint of strawberries)
  • 3/4 cup soy milk
  • 2/3 cup granulated sugar
  • 1 pinch of salt
  • 1 1/2 cups Silk vanilla soy creamer
  • 1 1/2 teaspoons vanilla extract
  • can add a drop of Agave to make it a little sweet if you want (optional)
  • Also added some Lorna vegan shortbread cookies before (optional)

Directions:
  1. Put strawberries in food processor
  2. Use hand mixer on low speed or whisk to combine soy milk, sugar, and salt until sugar is dissolved.
  3. Stir in heavy cream and vanilla
  4. Stir in strawberries with juices.
  5. Put in fridge overnight.
  6. Turn on ice cream maker, pour ice cream mixer into ice cream maker, and churn for 15 min.
  7. Freeze for a couple of hours before eating.
