I really like this strawberry ice cream recipe made with fresh strawberries, adapted from the Cuisinart recipe booklet:
Ingredients:
- 2 cups strawberries, hulled (basically 1 pint of strawberries)
- 3/4 cup soy milk
- 2/3 cup granulated sugar
- 1 pinch of salt
- 1 1/2 cups Silk vanilla soy creamer
- 1 1/2 teaspoons vanilla extract
- can add a drop of Agave to make it a little sweet if you want (optional)
- Also added some Lorna vegan shortbread cookies before (optional)
Directions:
- Put strawberries in food processor
- Use hand mixer on low speed or whisk to combine soy milk, sugar, and salt until sugar is dissolved.
- Stir in heavy cream and vanilla
- Stir in strawberries with juices.
- Put in fridge overnight.
- Turn on ice cream maker, pour ice cream mixer into ice cream maker, and churn for 15 min.
- Freeze for a couple of hours before eating.
