Flan


When I first met my husband. He was going crazy with flan- as in he would make it ALL THE TIME. This was because he decided to buy eggs in bulk (when he was single) and he didn’t know what else to do with them! So what better way to get rid of eggs than make flan!

Basically what we did:

1.      Preheat oven to 350. Warm the glass dish
2.      Make the egg mixture first. Beat 4 eggs, beat in evaporated milk, vanilla, then condensed milk (last ingred) until smooth.
3.      In medium saucepan, melt sugar on LOW heat. Swirl around. Might take a while…
4.      Quickly pour into glass dish that’s been warmed and cover whole thing
5.      Pour egg mixture in, potentially straining if clumps
6.      Cover with aluminum foil
7.      Bake for 60 min in water bath
8.      Before serving, might want to warm bottom of pan so caramel comes out…



Flan (~from allrecipes.com)


Ingredients:

1 cup white sugar
3 eggs (add 1 extra egg)
1 (14 ounce) can sweetened condensed
milk
1 (12 fluid ounce) can evaporated milk
1 tablespoon vanilla extract

Directions:

1.
Preheat oven to 350 degrees F (175 degrees C).
2.
In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sides. Set aside.
3.
In a large bowl, beat eggs. Beat in condensed milk, evaporated milk and vanilla until smooth. Pour egg mixture into baking dish. Cover with aluminum foil.
4.
Bake in preheated oven 60 minutes. Let cool completely.
5.
To serve, carefully invert on serving plate with edges when completely cool.
