Mussels with black bean and oyster sauce

My dad taught me this dish. It's quite tasty and fairly easy to make. I prefer using a box of frozen mussels instead of fresh mussels. I find that the mussels are usually larger and they are already cooked so easier to work with! No need to clean these mussels! I usually get them from the Korean grocery store. I usually first boil the mussels for a little bit with beer to get rid of the "seafood" smell.


Ingredients
  • bottle of beer
  • 16 box of frozen mussels
  • vegetable oil
  • 2 cloves minced garlic (you can use less or more)
  • corn starch
  • hot water
  • oyster sauce
  • black bean sauce
  • sugar
  • chopped scallions
Directions
  • Boil the bottle of beer with some water
  • Reheat mussels in the beer+water for ~ 5 minutes and then scoop them onto a plate so it doesn't overcook. You don't need the beer+water anymore, but save some to make the sauce below.
  • Make your sauce- combine hot water (can use some of the beer+water comb) + cornstarch. Then add oyster sauce, and black bean sauce. Mix everything together. 
  • Heat some vegetable oil and stir fry garlic in there until fragrant
  • Throw in the mussels into the pan with the sauce and make sure that the sauce coats all the mussels.
  • You might want to add some sugar to taste.
  • Add chopped scallions and stir fry for a few minutes- then you are done!
