Mini Frittatas









Mini Frittatas (~adapted from Ina Garten's Make it Ahead Cookbook)

Ingredients:
Olive oil
4 scallions, chopped
1 cup chopped ham
8 oz fresh spinach
2.5 tablespoons chopped fresh basil leaves
1 tablespoon lemon juice
shredded Monterey Jack cheese
8 eggs
1.5 cups half-half
1/2 teaspoon salt and 1/4 teaspoon pepper
4 tablespoons grated Parmesan cheese

Directions
Preheat oven to 375
Brush muffin tin with olive oil-inside and on top of the pan
Saute scallions with ham. Add spinach and toss. Take off heat and add basil and lemon juice. Let it sit for 5 min.
Put the mixture into 12 cups.
Top with shredded Monterey Jack
Whisk 8 eggs with 1.5 cups half-half, 1/2 teaspoon salt, and 1/4 teaspoon pepper
Pour egg mixture into muffin tin
Sprinkle with Parmesan cheese
Bake for 25 min until puffed and lightly brown on top. Frittatas will puff up quite a bit, but then will fall back down when cooled.
