Salmon and Melting Cherry Tomatoes



My kids usually like salmon, so decided to try a new salmon recipe- from Ina Garten's Barefoot Contessa Foolproof cookbook. The adults liked it, but my kids didn't like it as much probably because they aren't a huge fan of tomatoes. Thought it turned out pretty good through and would definitely try this again. I made the cherry tomato sauce earlier in the day. All I had to do before dinner was reheat the cherry tomato sauce and pan-fry the salmon!


Salmon and Melting Cherry Tomatoes (~adapted from Ina Garten's "Barefoot Contessa Foolproof" cookbook)

Ingredients:
Olive oil
Salt and pepper
1 cup chopped sweet onion, such as Vidalia (used 1 regular onion)
2 teaspoons minced garlic (2 cloves)
2 cups cherry tomatoes, halved (used one 16 oz container of cherry tomatoes)
1.5 Tablspoons good balsamic vinegar
1.5 Tablespoons julienned fresh basil
1 (2 lb) salmon fillet
sugar (not in the original recipe)

Directions:
1) Cooked garlic and onions in olive oil. Stirred in cherry tomatoes. Added 1 teaspoon salt and 1/2 teaspoon group pepper. Cooked on low medium heat for 10-15 min until thickened.
2) Take the cherry tomato mixture off heat and stir in the balsamic vinegar and basil.
3) I also added in some sugar to the sauce to taste
4) Sprinkled salmon with some salt and pepper.
5) Cooked salmon with minced garlic and olive oil.
6) Served salmon with the cherry tomato sauce.
