Korean Japchae noodles









One of my best friends in Korea is a great cook. She made this delicious Japchae recipe for us when we visited. She was nice enough to share it with me! I bought a bag of Japchae noodles from H-mart. It ended up being more than what the recipe called for, so in the end, I had to add some additional sugar, soy sauce, and sesame oil. You can also sprinkle some sesame seeds on top afterwards.
 
 
Chap Chae Recipe (~from Julie!)
 
Ingredients:
Japchae noodle (250g)- I used a bag of 340 g
yellow and red paprika- I omitted 
shitake mushrooms,
1 onion
1 green pepper
 
Sauce 1:
4 cups water
2.5 Tablespoons brown sugar
2 Tablespoons sugar
5 Tablespoons soy sauce 
5 Tablespoons oil (grapeseed, sunflower, etc.)- I used olive oil
 
Sauce 2:
2 Tablespoons sesame oil
salt and pepper
 
Directions:
1. Cut all the vegetable into bite size; saute them in a oiled pan. Add salt and pepper to taste. Remove them from the pan and leave them on the side.
 
2. Throw in all the sauce 1. ingredients in a large wok and boil. When starts to boil, add dry japchae noodles and cook on medium-low fire until almost all the sauce is gone (about 20~30min).
 
3.turn off stove. Add sauce 3. Mix throughly and let it cool down a bit.
 
4. Add cooked vegetables and mix before serving
