Swedish Drommar (Dream) Cookies









Husband saw this yesterday in the WSJ and thought it would be good for me to try. Recipe was originally from Magnus Nilsson - who was on a show that my husband and I enjoy watching- Mind of a Chef! Recipe doesn't call for many ingredients and makes a delicious light crispy cookie.  Just note that the dough is a little crumbly.

My edits:
  • Used bleached cake flour instead of unbleached
  • Used 1/2 teaspoon baking soda and 1/2 teaspoon baking powder instead of 1/2 teaspoon baker's ammonia
  • Baked 32 smaller cookies, at 14 min


Drommer (Dream) Cookies (~found on WSJ, adapted from Magnus Nilsson's "The Nordic Cookbook")

Total Time: 25 minutes Makes: 20 cookies

  • 7 tablespoons butter, at room temperature (microwaved for 20 sec)
  • ⅓ cup plus ½ tablespoon sugar
  • 1 teaspoon vanilla sugar or vanilla extract
  • 1⅓ cups unbleached cake flour
  • ½ teaspoon baker’s ammonia (used 1/2 teaspoon baking powder and 1/2 teaspoon baking soda)
  • Salt (did not use)

  • Directions:
    1. Preheat oven to 350 degrees. Use an electric mixer at medium speed to beat butter, sugar and vanilla until light in color, about 5 minutes. Sift flour and baker’s ammonia into bowl. Beat again until just fully combined, about 30 seconds. Take care not to overbeat.

    2. Shape dough into 20 balls and place them on a parchment-paper-lined baking sheet. Bake until cookies puff and crisp but do not color, about 15 minutes. The cookies should have no, or very little, coloration and should crack slightly during cooking. (I baked for 14 min)

    3. Remove cookies from oven and let cool completely before eating.
