Tres Leches Cake with Berries (~from Ina Garten's 'Make It Ahead' cookbook)
Ingredients:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 3 extra large eggs at room temperature (I place it in warm water for 20 min)
- 1 cup plus 5 tablespoons sugar
- 2 teaspoons pre vanilla extract
- 1/2 cup whole milk
- 1 1/4 cups heavy cream
- 1 (12-oz) can evaporated milk
- 1 (14-oz) can sweetened condesned milk
- 1/2 teaspoon pure almond extract
- seeds from 1 vanilla bean (I used 1 teaspoon vanilla extract)
- 8 cups fresh raspberries, strawberries (I added blueberries)
- confectioner's sugar for dusting
- Make-Ahead whipped cream-see below
- Preheat oven to 350 degrees. Butter 9x13x2 inch baking pan
- Sift flour, baking powder, and salt in small bowl and set aside
- Place eggs, 1 cup granulated sugar, and vanilla in bowl of electric mixer and beat on medium high speed for 10 min (really!) until light yellow and fluffy.
- Reduce speed to low and slowly add half flour mixture, then milk, and finally rest of flour mixture.
- Mix with rubber spatula to be sure batter mixed well.
- Pour batter into prepared pan, smooth the top, and bake 25 min until cake springs back when touched lightly in the middle and cake tester comes out clean. Set cake aside to cool in the pan for 30 min.
- In a 4-cup liquid measuring cup, whish together the heavy cream, evaporated milk, sweetened condensed milk, almond extract, and vanilla seeds.
- Using bamboo skewer, poke holes all over cooled cake. Slowly pour the cream mixture over the cake, allowing it to be absorbed completely before continuing to pour on more of the mixture.
- Cover the cake with plastic wrap and refrigerate for at least 6 hours.
- To serve- toss fruit with 5 tablespoons of granulated sugar. Dust cake with confectioner's sugar, cut in squares, and place on dessert plates. Surround cake with fruit, put a dollop of whipped cream on top and serve.
