Fruit Tarts

One of the earliest desserts I made when I came to Atlanta. It's pretty simple, and versatile. Also something that you can do with your kids!







Ingredients:
  • 12 Keebler mini graham cracker crusts (come in packs of 6)
  • 1 (8 oz) package cream cheese, softened
  • 1 (14 oz) sweetened condensed milk
  • 1/3 cup lemon juice
  • 1 teaspoon vanilla
  • Fruit (I usually use strawberries, blueberries, canned mandarin oranges; sometimes kiwi and raspberries)
  • Apple jelly

Directions:
  1. Beat cream cheese until fluffy
  2. Gradually beat in sweetened condensed milk until smooth
  3. Stir in lemon juice and vanilla
  4. Spoon the filling into the mini graham cracker crutst
  5. Top with fruit
  6. Brush with apple jelly (I microwave the jelly for 20-25 seconds to make it easier to spread. Then I let it cool a little bit before spreading on the fruit)
  7. Chill thoroughly before serving
