Really easy and very flavorful! Ended up using instant Indonesian curry packet. Husband really liked it!
Ingredients:
1 Munik Chicken Curry packet
1 can coconut milk (recipe calls for less, but found it too be too spicy)
5-6 boneless chicken thighs, cut into cubes
Carrots
6 red potatoes
1 onion
Here's what I did:
1) Microwaved carrots to soften
2) Diced potatoes and onions
3) Cook curry sauce packet with coconut milk in pan
4) Added chicken and vegetables
5) Cook for about 1 hour
