Easy appetizer to make with eggplant!
Ingredients:

- Eggplant
- Olive oil
- Shake and bake
- Salt to taste
Directions
- Preheat oven to 425
- Peel eggplant, and cut into long strips
- Toss with some olive oil and salt
- Coat with Shake and Bake
- Bake on baking sheet for 10-15 minutes (mine took 15 minutes to bake)
- Serve warm
