Walnut (or Pecan) Cinnamon Slices




Nice shortbread cookie. I was able to make 3 batches of cookies with this recipe. And it cuts very nicely. I could conveniently make the dough ahead of time, and then just cut them and bake when I needed them.

My variations
  • Used pecans
  • Coated all sides of the cookie with granulated sugar.

Walnut Cinnamon Slices (~From Tartine's recipe book)

Ingredients:
  • 1 3/4 cups and 2 tbspn all purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 11 tbspn unsalted butter
  • 2/3 cup sugar
  • 1 large egg
  • 1/2 teaspoon salt
  • 3/4 cup chopped walnuts cut coarsely (I used chopped pecans)
Sugar coating (if smaller batch, I just used 1 egg yolk and 1 tablespoon of heavy cream, and poured about 1/2 cup sugar for coating. and I ended up coating the entire cookie-sides, and front and back)
  • 2 large egg yolks
  • 2 tbspn heavy cream
  • 1 cup sugar
Directions:
  1. Sift together flour, cinnamon, and baking soda into a mixing bowl. Set aside.
  2. Beat together butter and sugar on medium speed just until blended and cream without adding a lot of air.
  3. In a small bowl, whisk together the egg and salt until well blended. Slowly pour eggmixture into the butter mixture, still beating on medium speed until well mixed.
  4. Add flour mixture and beat on low speed just until dough forms.
  5. Mix in the walnuts (or pecans)
  6. Turn the dough out onto a baking sheet lined with parchment paper, waxed paper or plastic wrap (I used plastic wrap)
  7. Form into logs or rectangles. (I formed into 3 logs wrapped in plastic wrap)
  8. Wrap tightly and refrigerate for ~ 4 hours (I stored in fridge longer)
  9. Preheat oven to 325.
  10. Make the egg wash. Unwrap the cookie logs and brush all sides well with the egg wash
  11. Coat with sugar
  12. Cut crosswise into 1/8 inch thick. And then coat again with sugar.
