Maple Roasted Brussels Sprouts with Bacon




This is my first attempt at Brussel sprouts. This recipe is amazing! I was able to prep it ahead of time, and then throw it in the oven and bake for 20 min before dinner. Highly recommend this!

Here's what I did:
  • Used 2 lb of Brussel sprouts (read somewhere that you should pick smaller Brussel sprouts)
  • Rinsed and chopped into halves or fourths, and put into a large bowl
  • Pan fried 9 strips of bacon for 5 min
  • Cut the bacon and put the bacon and bacon oil into the bowl with the Brussel sprouts.
  • Added 6 tablespoons of maple syrup, and 4 tablespoons of olive oil
  • Added in 1 teaspoon of salt and 1/2 teaspoon of pepper
  • Tossed everything together.
  • Let Brussel sprouts sit in the bowl until ready to bake
  • Spread onto a foil lined pan
  • Baked for 20 min at 400 degrees.

Maple Roasted Brussels Sprouts with Bacon (~from allrecipes.com)

Ingredients


1 pound Brussels sprouts, trimmed
1/4 cup extra-virgin olive oil
3 tablespoons pure maple syrup

  • 4 slices bacon, cut into 1/2-inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place Brussels sprouts in a single layer in a baking dish. Drizzle with olive oil and maple syrup; toss to coat. Sprinkle with bacon; season with salt and black pepper.
  3. Roast in the preheated oven until bacon is crispy and Brussels sprouts are caramelized, 45 minutes, stirring halfway through.
