This was a simple and yummy red bean mocha cake! You just mix all the ingredients together and bake in the oven! Husband and kids loved it!
I baked for 40 min (recipe calls for 45 min). I lined my 9x13 tin pan with foil too before baking and sprayed with cooking spray. Would definitely make this again!
Red Bean Mochi Cake (~from MJ and Hungryman's website)
Ingredients
- 1 pack (1 lb.) box Mochiko (or sweet rice flour)
- 1 cup sugar
- 1 teaspoon baking soda
- 3 eggs
- 2½ cups milk
- ½ stick butter, melted
- 1 can (18oz.) sweetened red bean paste
Instructions
- Preheat oven to 350F.
- Mix all the ingredients in a large bowl and whisk until thoroughly combined.
- Pour into a greased 9x13 pan.
- Bake for about 45 minutes.
- Cool completely before cutting into squares.
