Red Bean Mochi Cake


This recipe uses an entire box of Mochiko (sweet rice flour), and 1 can of sweetened red bean, which I bought in the Asian grocery store.
The recipe is pretty simple so my daughter was able to help me with this one! 
Kids loved it!


This was a simple and yummy red bean mocha cake! You just mix all the ingredients together and bake in the oven! Husband and kids loved it!

I baked for 40 min (recipe calls for 45 min). I lined my 9x13 tin pan with foil too before baking and sprayed with cooking spray. Would definitely make this again!

Red Bean Mochi Cake (~from MJ and Hungryman's website)

Ingredients

  • 1 pack (1 lb.) box Mochiko (or sweet rice flour)
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 3 eggs
  • 2½ cups milk
  • ½ stick butter, melted
  • 1 can (18oz.) sweetened red bean paste

Instructions

  1. Preheat oven to 350F.
  2. Mix all the ingredients in a large bowl and whisk until thoroughly combined.
  3. Pour into a greased 9x13 pan.
  4. Bake for about 45 minutes.
  5. Cool completely before cutting into squares.
