Sushi Rice Krispie Candy





We made this sushi candy for my daughter's 9th birthday, made with rice krispies.

I first made 2 batches of my usual rice krispie recipe (just combine 3.5 cups marshmallows, 2 tablespoons olive oil, and 3 cups of rice krispies.). Spread the rice krispies in a single layer in 2 pans. With the remaining rice krispies, the kids shaped them into small balls or small rectangles to look like nigiri. Then the kids could decorate with candy, and wrap them with fruit roll ups, edible black paper, or black fondant. It was my first time using edible paper and fondant. Both were surprisingly easy to use, especially the black paper. The edible paper is not extremely thin so I didn't have to worry about it breaking or cracking. The kids had a lot of fun making these candy sushi and experimenting with black fondant and black edible paper.

Usual rice krispies- just combine 3.5 cups marshmallows, 2 tablespoons olive oil, and 3 cups of rice krispies.

Tips I learned about rice krispies
  1. make sure to melt the marshmallows on low heat. Might take awhile for it to melt. But important that you do this on low heat. 
  2. when shaping the rice krispies into the baking pan, don't press too hard or else the rice krispie will become hard to eat.
  3. Use non-stick cooking spray to prevent the rice krispies from sticking in your hand

Tips I learned about black fondant:
  • Bought the Wilton fondant which was very easy to use. I didn't need the whole thing, so I cut out one third. 
  • To store: Stored unused fondant but wrapping in 2 layers of plastic wrap, putting in a Ziploc bag, and then putting it in a Tupperware. Kept it a room temperature. Heard that it's not good to put it in the fridge or store frozen
  • To roll: Put a little powdered sugar on board, but not too much. read that this dries it up. Put some Crisco shortening on rolling pin, and rolled this into a flat sheet, and then cut in strips for my sushi. Did in this in the morning, putting parchment paper in between layers. It was fine to use by evening for the party. 

Sushi Candy

Ingredients
  • 3-4 tablespoons olive oil
  • 6 cups marshmallows
  • 6-6.5 cups rice krispie cereal
  • Candy for the middle, like Swedish fish, gummy worms
  • Something to wrap around the rolls like fruit roll-ups, black edible paper, or black fondant
  • Containers to put candy sushi in (optional) 
Directions
  1. Line 2 pans with parchment paper
  2. Heat olive oil in pan. Melt the marshmallows on low heat. Might take a little while.  
  3. After marshmallows are melted, mix in the rice krispie cereal
  4. For rolls: (1) Spread the rice krispies in a single sheet. These will be later cut into smaller squares for kids to make rolls. (2) After cutting the sheet into squares for kids, put long gummy worms, or another type of candy in a single line on the edge closest to you. Don't have to much candy. (3) Roll the rice krispies, (4) cut into rolls, (5) wrap with fruit roll-up, black edible paper, or black fondant so it looks like sushi. 
  5. For nigiri: (1) Shape into nigiri when warm. (2) When kids are ready to use, top with candy. (3) Can also put a small strip of black fondant or edible paper on top.
