Grapefruit Avocado Salad

Added shrimp to the avocado grapefruit salad!





I have been eyeing this recipe in my America's Test Kitchen magazine for while because I love grapefruits! They are so refreshing and great for the summer!

I made this with 1 avocado and 1 grapefruit. I didn't have 2 tablespoons of reserve grapefruit, and omitted the cilantro and hazelnuts. Also, I made the  dressing ahead of time. Very tasty! Would make this again!

Grapefruit-Avocado Salad (~adapted from America's Test Kitchen)

Ingredients
  • 3 red grapefruits
  • 2 ripe avocado halved, pitted, and sliced 1/2 inch thick
  • 1/4 cup fresh mint leaves torn
  • 1/4 cup cilantro leaves (did not use this)
  • 1/4 cup blanched hazelnuts (did not use this)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon minced shallot
  • 1 teaspoon white wine vinegar (used dry white wine)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar, 
  • 1/2 teaspoon salt
Directions:
  1. Holding fruit over bowl, cut the grapefruits and remove the fruit from the membranes. (I didn't do this, so didn't have the grapefruit juice for later. it still tasted good though!)
  2. Arrange avocado in single layer on platter. Distribute grapefruit on top. Then sprinkle with mint, cilantro, and hazelnuts. 
  3. Make dressing: whisk oil, shallot, vinegar, mustard, sugar, salt and reserved grapefruit juice in bowl. Drizzle dressing over salad. Serve immediately.
