My Mom's Sweet and Sour Spare Ribs

My mom is visiting from Hong Kong so we are spoiled with lots of delicious Chinese food!  This is my mom's delicious sweet and sour pork!! So yummy and my kids and husband love it!

Mom's Sweet and Sour Pork

Ingredients:

·       ~ 1 pound of spare ribs or riblets

·       Dark soy sauce

·       Dried onion flakes

·       1 tablespoon corn starch

·       ¼ cup Chinkiang Chinese Vinegar (my mom likes gold plum brand and balsamic vinegar is ok)

·       Chopped garlic

·       Ketchup

·       Brown sugar

·       Red and green peppers, and onions (optional)

Directions:

1.     Marinate the ribs with dark soy sauce, dried onion flakes, and 1/4 cup gold plum chinkiang Chinese vinegar. Then add in one tablespoon of corn starch.

2.     Pan fry garlic with a small amount of oil. Make sure not to burn the garlic. Then add in the pork and cook on high heat. When adding the pork, try not to add in any liquid, but save the marinating liquid for later. Add ketchup and brown sugar. Add a small amount of water if you are finding that the sauce is becoming too thickened.

3.     Brown the pork.

4.     Then add rest of vinegar marinating mixture to the pan. When the sauce is too thickened, add a little water, a little at time. Add some brown sugar to taste.

5.     Cook on low heat until cooked.
