I used vanilla cake mix+one 12 oz can seltzer water, and then added gel coloring to make different colors. |

Cake with 4 layers and frosting in between. Make sure to remember to put frosting in between the cake board and first layer. That helps to hold the cake in place. |

Selling the cake to support a mission trip! |
The girls with their friends made these unicorn cakes to sell for a mission trip at our church. We made 4, four-layer, six-inch unicorn cakes. We got many of the ideas from watching a
Nerdy Nummies video. However, to make it a little easier and vegan, I used cake mix, 12 oz cans of seltzer water, and ready-made frosting. Each box of cake mix made 3 six-inch cakes.
Although I did save some time just using boxes of cake mix, it did still take some time making all the cakes. I baked the cakes Thurs and Friday, and the girls decorated the cakes Sat morning.
I was so proud of the girls for how well they decorated their unicorn cakes, and they did this to support a mission trip! On season 2 of Netflix's Nailed It, the bakers are supposed to make unicorn cakes. The girls' cakes look so much better than those on
Nailed It!
Unicorn Cakes
Ingredients (for 4 four-layer, six-inch cakes):
- 4 boxes of cake mix and 4 twelve-oz cans of seltzer water
- Lots of tubs of frosting (but better if frosting is already colored), because the frosting is still a little watery despite using gel frosting
- Gel coloring
- 4 white sticks for unicorn horn
- white fondant
- gold spray pain or gold edible paint
- black frosting for eyes
- Round cake boards, and possibly cake boxes
Directions:
- For each box of cake mix, combine with 1 can of 12-oz seltzer water. You can add food coloring to the cake batter to make different colors. Each cake mix box will make ~ 3 six-inch cakes. Bake according to the box instructions (probably ~25 minutes depending on your oven)
- After cakes are cooled, cut off the tops of cake
- Layer cakes and put frosting in between layers. Put a dab of frosting on the cake board, and place your first layer on top of the cake board. Then frost the cake, and put the 2nd layer on top. Keep repeating until all 4 layers are stacked with frosting in between.
- Put crumb coat of frosting and store the cake in the fridge. I wrapped this cake with saran wrap so that it wouldn't dry out.
- The morning that the girls would decorate the cake, I put the final layer of white icing on the entire cake.
- Make different colored frostings by mixing gel food coloring into the tubs of frosting, or used frosting that is already colored. Place frosting into piping bags.
- Pipe the unicorn's hair using different colors.
- Make unicorn ears using fondant.
- Make Unicorn horn using 1 white stick, fondant and spray with gold edible paint. See this video for helpful tips on making the unicorn horn: https://youtu.be/Xh_Neg-Hp84
- Draw eyes using black frosting.
- Add unicorn horn to cake.
