Vegan Mint Chip Ice Cream
Ingredients:
- 1 cup soy milk
- 2 cups French vanilla soy creamer
- 3/4 cup granulated sugar
- pinch of salt
- 1 teaspoon vanilla extract
- 2 teaspoons peppermint extract
- 1-2 drops green food coloring (optional)
- 1/2 to 1 cup of mini chocolate chips
Directions:
- Mix together soy milk, soy creamer, sugar, pinch salt, vanilla and peppermint extracts. You can add 1-2 drops of food coloring if you want. Let it sit in the fridge over night.
- Next day, put the mixture in ice cream maker. Mix for 10-15 minutes, and then add mini chocolate chips.
