Vegan Mint Chip Ice Cream

Ingredients:
  • 1 cup soy milk
  • 2 cups French vanilla soy creamer
  • 3/4 cup granulated sugar
  • pinch of salt
  • 1 teaspoon vanilla extract
  • 2 teaspoons peppermint extract
  • 1-2 drops green food coloring (optional)
  • 1/2 to 1 cup of mini chocolate chips

Directions:
  1. Mix together soy milk, soy creamer, sugar, pinch salt, vanilla and peppermint extracts. You can add 1-2 drops of food coloring if you want.  Let it sit in the fridge over night. 
  2. Next day, put the mixture in ice cream maker. Mix for 10-15 minutes, and then add mini chocolate chips.
