Instant Pot Ribs


After rubbing with BBQ sauce and baking at 500 degrees for 5-10 min


After cooking in the instant pot. It was very flavorful and tender.

To cook in the instant pot, I put a trivet in the center and put the ribs in a circle around the trivet with the meat facing out.



This was the first recipe that I made using the Instant Pot- ribs. I used 2 racks of St. Louis style ribes and cooked it for 30 min earlier in the day. Then baked it 500 degrees in the oven for 5-10 min before serving. It was yummy and the kids even ate it!

Here’s what I did:

1.      Made the rub below, but used 4 times the ingredients (4 teaspoons each) except for brown sugar were I used 5 times what the recipes called for (5 teaspoons).

2.      Rubbed the ribs with the rub.

3.      Put the trivet in the center of the instant pot.

4.      Poured 1 cup of water and ½ cup apple cider into the pot.

5.      Placed the ribs around the trivet with the meat side down and the meat facing out. I couldn’t get it to sit on the trivet.

6.      Cooked it for 30 min in the instant pot earlier in the day.

7.      Before serving, brushed with BBQ sauce and baked for 500 degrees at 5-10 min. (could probably also next time grill it)

Instant Pot Ribs (~from Tastes better from Scratch)

Ingredients

1-2 racks pork ribs (*see note below) (used 2 racks of St. Louis style ribs)

1 teaspoon salt (used 4 teaspoons)

1 teaspoon freshly ground black pepper (used 4 teaspoons)

1 teaspoon garlic powder (used 4 teaspoons)

1 teaspoon chili powder (used 4 teaspoons)

1 teaspoon onion powder (used 4 teaspoons)

1 teaspoon light brown sugar (used 5 teaspoons)

1 cup water

1/2 cup apple juice , or 1/4 cup apple cider vinegar (used 1 cup water and ½ cup apple cider)

1 teaspoon liquid smoke , optional* (did not use)

1 cup barbecue sauce , homemade or store-bought (*see note) (used store bought)



Instructions

1.      Remove membranes from the back of ribs, if needed.

2.      Rubs seasonings over both sides of ribs.

3.      Place wire trivet rack in the bottom of the instant pot.

4.      Add water, apple juice (or apple cider vinegar) and liquid smoke (optional, but recommended for that great smokey flavor).

5.      Place the ribs upright, with the meat side facing out. If you’re using one large rack of ribs, then circle them around the pot.

6.      Secure lid and close vent.

7.      Press “manual” or “pressure cook” and cook on high pressure for 25 minutes.

8.      When the timer beeps, allow the pressure to naturally release for 15 min, then turn the valve to quick release.

9.      Carefully remove ribs to a large, foil-lined baking sheet and slather them in BBQ sauce.

10.   Optional: broil them in the oven for 2-3 minutes to caramelize the bbq sauce. (baked at 500 degrees for 5-10 min)



Recipe Notes

*For spare ribs, add 5-10 minutes to the cooking time (high number for higher altitudes and very “fall-off-the-bone” ribs, lower number for lower altitude and tender ribs).



*Liquid smoke can be found near the bbq sauces at your local grocery store. It will add an amazing smokey flavor to the ribs.
