With butternut squash, usually I just make mashed butternut squash, but this time, decided to roast it, and then toss it with maple syrup.
Ingredients
- 1 butternut squash
- olive oil
- salt and pepper
- maple syrup
Directions
- Preheat oven to 425 degrees
- Remove the seeds and cut the butternut squash into 1/2 inch slices.
- Toss with olive oil, salt and pepper, and lay on a single layer on baking sheet.
- Bake for 25 minutes at 425 degrees.
- Toss with maple syrup.
