Red Bean Mini Pies




It was Pi day today! My daughter just learned what Pi was over the weekend. Decided to try this very easy pie recipe with the kids. I already had Pillsbury pie dough and some left over red bean when we made moon cakes. I got the idea when I saw this on Betty Liu's website. Kids had a lot of fun making these and easy enough to do, even on a week night!

Ingredients
  • Pillsbury pie dough
  • Can of sweetened red bean paste
  • soy milk
  • sprinkling sugar
  • Rolling pie, and cookie cutters

Directions
  1. Preheat oven to 350 degrees F.
  2. Roll out the pie dough a little bit and cut out different shapes using cookies cutters. Make sure to cut out 2 of every shape.
  3. Put some red bean paste in the center of 1 pie dough cut-out, and top with another pie dough cut-out. 
  4. Use fork to crimp edges of mini pie together. Use toothpick, fork or knife to create small vents in center of pie. My kids also scored their initials in the pie. 
  5. Put in fridge for 10 minutes. 
  6. Brush with milk, and sprinkle with sprinkling sugar, or could use granulated sugar.
  7. Bake for 10-15 minutes or until browned. (originally had baked at 425 for 18 min but that temperature was too high.)
