Vegan Stained Glass Cookies

Since I was making desserts to remind us of our trip to Spain, decided to make vegan stained glass cookies to remind the kids of all the beautiful cathedrals we visited in Spain! These were really easy to make! I just put some crushed jolly ranchers into the centers of cookies and baked for 12 minutes. You can put multiple colors in one cookie. The kids had fun designing these stained glass cookies.

Vegan Stained Glass Cookie

Ingredients:

·       Crushed jolly ranchers or any other hard colored candy

·       Cookie cutters

Directions:

1.     Make the vegan sugar cookie dough

2.     Preheat oven to 350.

3.     Roll out the cookie dough using a large cookie cutter. Place cut cookie on parchment paper or baking sheet.

4.     With the large cut-out cookie dough, then use another cookie cutter to cut out a smaller shape within the dough. I found it better to cut out the inner shape of the cookie on the baking sheet so that it’s less likely to break when you transfer the cookie.

5.     Put crushed candy in the center of the cookie. Try not to get the candy onto the cookie or the parchment paper or baking sheet.

6.     Bake for 10 min at 350 degrees.
