Vegan Pancakes






Made these pancakes for father’s day! To make the letters, poured the batter into a piping bag and cut a small hole at the end. Can also used a squeeze bottle, but I didn’t have one. Make sure that the pan is hot before piping the letters on the pan. Sprayed the pan with cooking spray each time.

Ingredients


·        1 1/4 cups all-purpose flour

·        2 tablespoons white sugar (used 3 tablespoons sugar)

·        2 teaspoons baking powder

·        1/2 teaspoon salt

·        1 1/4 cups water

·        1 tablespoon oil

Directions


1.     Sift the flour, sugar, baking powder, and salt into a large bowl. Whisk the water and oil together in a small bowl. Make a well in the center of the dry ingredients, and pour in the wet. Stir just until blended; mixture will be lumpy.

2.     Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.

  1. I modified this to add:

    * 4 tablespoon of sugar
    * 1 tablespoon of honey
    * 2 tablespoon of vegan butter
    * olive oil
    * 1.5 cups of flour
    * 1 tablespoon of vanilla soy milk
    * 1 teaspoon of vanilla extract
