Apple Strudel Muffins



She loves baking. She says that she wants to be a "professional mommy baker" when she grows up. 
The golden delicious tree that we picked apples from! 


My kids love apple picking. We just went this past weekend so we have a bunch of apples at home. I love that I can try different apple recipes with them! Tried this apple muffin recipe which is delicious.

Here is what I did:

1)     Preheat oven for 375

2)     Shredded 3 golden delicious apples and squeezed them to remove some of the juices

3)     Combined flour, baking powder, baking soda, salt, cinnamon, and nutmeg

4)     Creamed together butter and sugar. Then added the eggs and vanilla.

5)     Added the flour to the wet mixture, and at the end added in the shredded apples.

6)     Placed batter in the muffin tins (was able to make 14 muffins)

7)     Made the strudel topping by first mixing flour, brown sugar, and cinnamon well together; then cut in the butter.

8)     Topped the muffins with the strudel.

9)     Baked for 20 min.

Apple Strudel Muffin (~from allrecipes.com)

Ingredients

·        2 cups all-purpose flour

·        1 teaspoon baking powder

·        1/2 teaspoon baking soda

·        1/2 teaspoon salt

·        1 teaspoon ground cinnamon (added this)

·        ½ teaspoon ground nutmeg (added this)

·        1/2 cup butter

·        1 cup white sugar (1 reviewer recommended ½ cup white sugar and ½ cup brown sugar)

·        2 eggs

·        1 1/4 teaspoons vanilla

·        1 1/2 cups chopped apples (used 3 shredded Golden delicious apples and squeezed some of the juice out)

·        1/3 cup packed brown sugar

·        1 tablespoon all-purpose flour

·        1/8 teaspoon ground cinnamon

·        1 tablespoon butter

Directions


1.      Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.

2.      In a medium bowl, mix flour, baking powder, baking soda and salt.

3.      In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.

4.      In a small bowl, mix brown sugar, flour and cinnamon. (one reviewer recommended to make sure to mix the brown sugar and flour well together before adding in the butter). Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.

5.      Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.
