Fried or Air-Fried or Steamed Bean Curd Roll







I like eating steamed bean curd rolls so my mom showed me how to make fried bean curd rolls. She looked at a youtube video by Chef Susan Wong to help guide her. We ate them with Worchester sauce. Unfortunately, my mom did not have measured ingredients for me to write down. She also found another Cantonese youtube video by TVB showing a steamed version of the bean curd roll. These are versatile and you can use whatever filling you want! 

Update: Also cooked this in the air fryer for 5 min at 390. Sprayed the top with a little cooking spray before cooking. Also filled it with a combination of cooked ground pork, napa, and all-spice tofu. 

Bean Curb Rolls 腐皮卷 (based on a Cantonese Youtube video by Chef Susan Wong, recipe on fried bean curd rolls start at 26 min)

Ingredients:

·        1 package bean curd sheets, cut into squares (after cutting, cover with wet towel to prevent from drying)

·        Filling ingredients

o   Shredded carrots

o   Shredded cabbage

o   Shredded shitake mushrooms

o   Sliced pork, marinated with salt, pepper, soy sauce, char siu sauce, oyster sauce (can also try using ground pork mixed with marinade and corn starch)

o   Bean sprouts (optional)

o   Scallions (optional)

·        Sauce (optional)

o   Sliced ginger

o   Sliced scallions

o   Soy sauce

o   sugar



Directions

1.                Stir fry filling ingredients together until cooked.

2.                Drain cooked filling ingrdients.

3.                Cut the bean curd sheets into squares (you want them to be soft). Cover the cut bean curd sheets with a wet towel to keep them from drying out.

4.                Roll the bean curd rolls Place them like a diamond shape with one triangle tip towards you and fold. Gently pull the left side of the wrapper over the middle, and then the right, to close up the ends of the roll. Roll it up away from you, continuing to gently tuck the filling in tighter as you go. The tucking helps the roll keep a nice shape, and guards against loose, unraveling rolls. We also saw a video where they sealed the rolls with a little water and corn starch, but we did not do that.  

5.                Steam or fry it the bean curd rolls. If frying the bean curds, fry until cooked. If steaming the bean curd rolls, steam for approximately 8 minutes. It is ok if they are over steamed.

6.                Make sauce (optional): Stir fried ginger with scallions, and then add soy sauce and sugar.
