Vegan Mocha Ice Cream

Ingredients

·      1 ¼ cup soy milk

·      1/3 cup granulated sugar

·      2 tablespoons instant coffee or instant espresso

·      3 oz of vegan semi-sweet chocolate

·      3 oz vegan dark chocolate

·      2 cups soy creamer

·      2 teaspoons vanilla extract

·       Dash of salt

Instructions

1.    Heat soy milk, sugar, and instant coffee/espresso until it starts to lightly simmer.

2.    Pour hot soy milk into chocolate.

3.    Stir in soy creamer, vanilla, and dash of salt.

4.    Stored in fridge overnight.

5.    Put mixture into ice cream maker next day and churn for 20 min. I discovered that the chocolate will harden at the top so it might be best to break up the chocolate layer before putting it into the ice cream maker, or else it will cause the churning device in the middle not to work. I like the texture of the chocolate pieces in the ice cream.
