Instant Pot Wrapped Sticky Rice

 


I made this again and did these short-cut steps:
1) Boiled the dry leaves for 10 min
2) Soaked rice in the meantime, drained and sprinkled with 5 spice powder
3) Microwaved shitake mushrooms in water. Chopped and tossed with oyster sauce and sesame oil.
4) Wrapped (with rice, mushrooms, Chinese sausages, +/- marinated pork) and tied with string
5) Cooked for 1 hour in instant point submerged in water and natural release. 

Instant Pot Lotus wrapped sticky rice

 

Ingredients

·        pound pork belly or pork with some fat

·        Salt, pepper

·        1 tablespoon Soy sauce

·        1 tablespoon Oyster sauce

·        1-2 teaspoons 5 spice powder

·        1 teaspoon sugar                             

·        ½ teaspoon sesame oil

 

·        Dried or fresh shitake mushrooms, chopped

 

·        Oyster sauce

 

·        3 dried Chinese sausages, chopped

 

·        4 cups sweet rice

 

·        Lotus Leaves

 

Directions

1.    Soak leaves in water for 2 hours (they recommend 12 hours; can freeze leftover leaves that have been soaked- just steam these frozen leaves before use- step 5)

2.      Marinate pork for at least 1 hour

3.      Soak rinsed rice for at least 10 min (also used unsoaked rice)

4.      Chop mushrooms and sausages. Mix mushrooms with some oyster sauce

5.      Take 2 bamboo leaves and fill with rice and fillings. Close the bamboo leaves and take a 3rd one to bind everything together. 

6.      Wrap and tie with string

7.      Submerge wrapped sticky rice in water. Cooked first by steaming on rack without submerging in water, and some of rice was uncooked

8.      Cook in instant pot for 1 hour, and let natural release
