Masaman Curry

 



This made a great curry dish and I used curry paste and the recipe from a can.  I made some modifications in red and below are the steps that I did.

 

Here is what I did:

1)     Stir fried onion and carrots

2)     Added masaman curry paste and 300 ml coconut milk

3)     Added chicken and 200 ml of coconut milk

4)     Added okra and pepper

5)     Cooked on medium heat until done

6)    I added a little bit of salt and sugar to taste 

 

Masaman Chicken Curry (~from the Maesri can)

 

Ingredients

·        4 oz Masaman Curry paste

·        500 ml coconut milk, divided into 300 and 200 ml (1 can of coconut milk is 400 ml)

·        400 g of chicken (I used ~ 1.5 pounds)

·        200 g potato (did not use)

·        100 g onions (used 1 onion)

·        2 tspn peanut (omitted)

·        Also added 10 okra (diced), 1 red pepper (diced), and ~15-20 baby carrots (diced)  

 

 

Directions

1)     Stir fry 1 can of Masaman curry paste and 300 ml of coconut for 5 min on medium heat

2)     Add chicken or beef and 200 ml of coconut milk and bring to a boil while periodically stirring

3)     Add potatoes and onion and cook until tender

4)     Add peanuts (optional)
