Delicious and easy to make chocolate cake! I made this for my nephew.
All the kids loved it!
Chocolatey
Chocolate Cake (~WSJ, recipe adapted from “Simple Cake” by
Odette Williams)
Ingredients
- Butter, for greasing
pan
- 1¾ cups all-purpose
flour
- ½ cup unsweetened
Dutch-process cocoa powder
- 1 ½ teaspoons baking
powder
- 1½ teaspoons baking
soda
- ½ teaspoon salt
- 1 ½ cups granulated
sugar
- 2 eggs, at room
temperature
- 1 cup whole milk
- ½ cup grapeseed oil
or neutral oil
- ½ teaspoon pure
vanilla extract
- 1 cup boiling water
Steps

Preheat oven to 350 degrees. Grease 10 by 3 inch
round pan or a 12 by 4 by 3 inch loaf pan with butter, line bottom and sides
with parchment paper and grease (I used 2 smaller loaf
pans, sprayed with cooking spray and lined with parchment paper; did not grease
the parchment paper).

Sift flour, cocoa, baking powder, baking soda,
and salt together in a mixing bowl. Whisk in sugar.

In another large bowl, whisk together eggs,
milk, oil, and vanilla. Gradually add wet ingredients until smooth with no
lumps. Stir in boiling water to combine.

Pour batter into prepared pan. Bake in center
of oven until wooden skewer inserted in center of cake comes out clean and cake
bounces back when lightly pressed, about 50 min for round pan, 35 min for loaf
pan (checked at 35 min and still undercooked so baked
at 40 min).
5.
Remove cake form oven and let stand for 10
min. Run a butter knife around cake to gently release. Peel parchment from
sides. Invert cake onto a wire rack and peel off bottom piece of parchment.
