I tried making eggplant fries with my air fryer. I have
tried Baked
Eggplant Fries and my kids really liked that. You don’t need a lot of ingredients
but it does take some time to bread each eggplant and cook it in the air-fryer
in a single layer. You want to make sure your eggplant are cut into somewhat
thin French-fry strips or else it won’t be crisp enough.
Air-Fried
Eggplant Fries
INGREDIENTS

1 eggplant, cut into thin strips like French fries
·
Soy milk
·
Panko bread crumbs
·
Garlic powder
·
Salt and pepper to taste
·
Cooking spray
DIRECTIONS
1.
Spray air-fryer tray. I only needed to do it for
the first batch. I did not spread the tray for subsequent batches.
2.
Combine panko bread crumbs, garlic powder, salt
and pepper.
3.
Quickly dip eggplant into soy milk.
4.
Toss eggplant into panko mixture.
5.
Spray air-fryer tray. Place coated eggplant on
single layer in air-fryer tray.
6.
Spray top of eggplant.
7.
Cook for 4 min at 400 degrees. Flip. Cook for
another 4 min at 400 degrees.
8.
Repeat steps 3-7 until you have cooked all of
the eggplant.
