I’m always looking for new ube recipes. This waffle recipe was a
big hit with the family for brunch and gave me a chance to use some of my ube
extract!
Ube Mochi Waffle (keepingitrelle.com)
INGREDIENTS
Ube waffles

3/4 cups milk
·
1 egg
·
1/2 teaspoon ube extract
·
1/4 teaspoon vanilla extract (Try my homemade
vanilla extract recipe)
·
1 1/4 cup mochiko flour
·
1/4 cup sugar
·
1 1/2 teaspoon baking powder
·
1/4 teaspoon salt
Ube glaze (did not use)
·
1 cup powdered sugar
·
1 tablespoon milk
·
1/2 teaspoon ube extract
·
1/4 teaspoon vanilla extract
DIRECTIONS
For the waffles:
1.
Preheat waffle iron.
2.
In a medium mixing bowl add milk, egg, ube,
and vanilla extract. Whisk until well combined. Set aside.
3.
In another medium mixing bowl add mochiko
flour, sugar, baking powder, and salt. Whisk until well combined.
4.
Add wet ingredients to dry. Whisk until just
combined.
5.
Spray nonstick cooking spray on the waffle
iron. Add 1/4 to 1/2 a cup of the batter to the waffle iron. Cook for 3-5
minutes or until golden brown. (Cooked 2 min and 35
seconds. I have a smaller waffle maker)
For the ube glaze:
1.
Add powdered sugar, milk, ube extract, and
vanilla extract to a bowl. Whisk until well combined. This can be used to
drizzle over the ube mochi waffles.
2.
Add toppings of your choice and ENJOY!
