This was
my first time trying a vegan cornbread recipe. I like that this recipe just
uses ingredients I typically have at home!
Ingredients

1 1/4 cups all purpose flour
·
1 cup yellow corn meal
·
2/3 cup granulated sugar
·
1 teaspoon salt
·
1 tablespoon baking powder
·
1 1/4 cup unsweetened almond milk (used soy milk)
·
1/3 cup canola oil
Instructions
1.
Preheat the oven to 400 degrees F (baked at 375) and lightly grease a 8 x 8 pan, or a 9
inch round cake pan.
2.
In a large bowl, combine the flour, cornmeal,
sugar, salt and baking powder and stir.
3.
Now pour in the almond milk and canola oil.
Stir until well combined. Pour batter into prepared pan.
4.
Bake for 20-25 minutes (baked 25 min), until a toothpick inserted into the
center comes out clean.
