I just
discovered this new cooking blog (Mochi
Mommy - Asian American Recipes and Lifestyle) and I love all of her
recipes! I love the flavors that she uses and the recipes are easy to follow
without a lot of ingredients needed. The 2 recipes that I tried from her blog
turned out really well! My youngest
loves matcha and these cookies are great for the holidays! I baked these
cookies for 10-11 minutes.
Ingredients
1/2
cup softened, unsalted butter (114g)
1
cup sugar (200g)
1
tsp baking powder
1/8
tsp baking soda
1/2
tsp salt
2
eggs
2
cups flour (260g)
2
tbsp matcha, See notes
For
rolling:
1/4
cup granulated sugar (50g)
1/2
cup powdered sugar (50g)
Instructions
1.
Preheat your oven to 350 degrees
and line a baking sheet with parchment paper.
2.
Cream room temperature butter
with sugar, baking powder, baking soda, and salt.
3.
Add in eggs and mix until
homogenous.
4.
Sift matcha into your flour and
pour into your mixing bowl, slowly mixing until all ingredients are
incorporated.
5.
Using a cookie scoop, scoop 1.5
tbsp balls of dough.
6.
Roll the balls in the granulated
sugar, then the powdered sugar.
7.
Place on your baking sheet and
bake for 11 minutes. (Baked for 10-11 min)
