Simple
recipe and made very pretty cookies. My youngest daughter loved this! I used 2 teaspoons
of matcha powder and baked these for 9 minutes and 30 seconds.
Ingredients
- 2 sticks butter, 1 cup
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 3/4 tsp salt
- 1 cup granulated sugar, can sub 1.5 cups powdered sugar
- 1 egg + 1 yolk
- 2 1/2 cups flour
- 1/4 cup freeze dried strawberry, blended into powder
- Optional 1 drop red food coloring
- 1 tsp matcha (used 2 tspns)
- Flour for dusting
Instructions
- Cream butter, baking powder, baking soda, salt, and sugar.
- Add egg and yolk and mix until homogenous
- Add flour and mix to combine into dough.
- Split dough in half. Mix strawberry powder into one half and
matcha into the other.

Roll each color dough into a 1/4 inch thick
rectangle (roughly 8×11″). Place pink rectangle on top of green rectangle and
roll into a long log.

Wrap log in plastic wrap and leave in fridge to
chill 4 hours to overnight.

When ready to bake, preheat oven to 350 degrees and
line three baking sheets.

Slice cookie log into 1/4 inch thick circles. Place
on baking sheets and bake for 10 minutes (baked 9 min and 30
seconds).
